Recipe: Russian Potato Salad
Today’s recipe comes from the old country, I emigrated from Russia over 40 years ago and still remember my mother making this dish for me as a child. It was so good it has remained with me to this day and I would like to share it with you now. Let me know what you think!
Ingredients
4 large redskin potatoes
1/2 a medium onion
1 large green apple (for surprise crunch)
3 medium kosher pickles
2 carrots
1/2 teaspoon of salt
1/2 teaspoon of pepper
1 teaspoon of parsley
3 tablespoons of mayo
Directions
Cook potatoes and carrots until done, drain water and let cool.
Cut potatoes, carrots, and pickles in half cubes, add chopped onion
Peel and core green apple, cut into small cubes and add to mix.
Add salt, pepper and parsley, mix together.
Add in mayo and continue mixing until equally coated throughout.
